Sardine-Avocado Toast

Introducing our Kitchen Manager's favorite new recipe from The Happy Kitchen cookbook: Sardine-Avocado Toast! This delicious recipe is quick to make, flavorful and a great way to utilize a pantry stable. We enjoy this as a quick and easy lunch option or as an amazing addition to brunch with friends. Ingredients:

  • 2 tablespoons finely chopped parsley, divided
  • 1 tablespoon apple cider vinegar*
  • 1 lemon, zested and cut into wedges
  • Dash of salt
  • Dash of black pepper
  • 2, 3.75-ounce tins sardines in water**
  • 1 avocado
  • 4 slices whole-wheat bread
  • Red chili flakes (optional)

Instructions:

In a small bowl, combine 1 tablespoon parsley, vinegar, and lemon zest. Add a dash of salt and pepper.

Drain the sardines.

Add the sardines to the mixture and stir. Let sit for up to 15 minutes if time allows.

Halve the avocado and remove the pit. Mash the flesh in each half with a fork.

Toast the bread in a toaster, skillet, toaster oven, or under the broil setting of the oven for 2–3 minutes until golden brown.

Spread the mashed avocado evenly onto the toast, then top with the sardine mixture.

Garnish with the remaining parsley, red chili flakes (optional), and serve with lemon wedges.

*Red wine vinegar, white wine vinegar, or rice vinegar may be substituted.

**Sardines packed in oils or sauces will also work, but may add additional fat or sodium to the recipe. Drain the oil or sauce and, if desired, reserve some to drizzle over the finished recipe to add more flavor.
