SFC targets middle schools within AISD for the Sprouting Healthy Kids project where students exhibit high risk factors for obesity and diet related diseases. Indicators for at-risk of obesity and diet related diseases are low-income and ethnic minority. SFC builds partnerships with schools that have an above average percentage of students in the free or reduced lunch program, and where students are predominantly from ethnic minority families.
SFC works with middle schools because students of that age-range are better able to physically participate in gardening and cooking activities. Additionally, students begin making their own choices, including what to eat, and are able to grasp complex concepts such as "food systems" and sustainability.
Sprouting Healthy Kids focuses on schools within the Austin Independent School District as we learn to navigate district decision making processes, school food policies and procedures, and other aspects of a single urban school district.
